April in Egypt is characterized by warm temperatures ranging from 20 to 30 degrees Celsius (68 to 86 degrees Fahrenheit) in most regions, with low chances of rainfall. The coastal areas have mild temperatures with some humidity, while the desert regions and Nile Valley experience dry weather. It’s a great time for outdoor activities and exploring Egypt’s historical sites, although temperatures can start to rise towards the end of the month. It’s advisable to check the current weather forecast and pack accordingly.

Recipe of the Month

Mahshi is a delicious and flavorful Egyptian dish that is sure to impress your taste buds with its aromatic spices and tender stuffed vegetables. Enjoy this traditional dish that is loved by many in Egypt and beyond!

Ingredients:

  • 8 large vegetables for stuffing, such as bell peppers, zucchinis, or eggplants
  • 1 cup rice
  • 1/2 pound ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 2 cups vegetable or chicken broth
  • Juice of 1 lemon

Instructions:

  1. Prepare the vegetables by cutting off the tops and removing the seeds and membranes. If using bell peppers, cut off the tops and remove the seeds and white ribs from the inside. If using zucchinis or eggplants, cut off the ends and scoop out the flesh, leaving a shell to stuff.

  2. Rinse the rice under cold water until the water runs clear, then drain.

  3. In a large bowl, mix together the ground beef or lamb, onion, garlic, parsley, cilantro, tomato paste, olive oil, cumin, cinnamon, allspice, salt, and pepper.

  4. Add the rice to the meat mixture and mix well.

  5. Stuff the vegetables with the meat and rice mixture, packing it tightly.

  6. In a large pot, arrange the stuffed vegetables in a single layer.

  7. In a separate bowl, mix together the tomato sauce, vegetable or chicken broth, and lemon juice. Pour the mixture over the stuffed vegetables in the pot.

  8. Bring the liquid to a boil, then reduce the heat to low and let simmer for about 45 minutes to 1 hour, or until the vegetables are tender and the rice is cooked.

  9. Serve the Mahshi hot, garnished with additional parsley or cilantro if desired. It can be enjoyed on its own or with a side of bread or rice.
