Location of the Month
The Dream Stele - Giza, Egypt


Giza is the home to The Dream Stele which is also known as the Sphynx Stele and tells us the story of young Prince Tuthmosis, who got very hot and decided to rest in the shadow of the Great Sphynx, he fell asleep and dreams that the Sphynx speaks to him and promises him the throne of Egypt if Tuthmosis clears the sand away from around it.
Prince Tuthmosis did as he was instructed and went on to become the Pharaoh Tuthmosis IV. In gratitude he promoted Re–Horemakhet above Amun–Re, dedicated a temple to Horemakhet and placed the stele between the paws of the Sphinx to record the tale. The Stele is made out of granite and stands between the paws of The Sphynx at 12 ft. tall and weighing 15 tons.

Not only will you be able to take pictures of it but you will also be able to stand right in front of it and see its hieroglyphic inscriptions. It’s truly a must see.

Monthly Weather

August is the last month of summer and remains hot with average temperatures in the range of an average low of temperatures in the range of an average low of 71.8°F (22.1°C) and an average high of 93.6°F (34.2°C), very similar to the month of July.
As it is almost never rains during the months of July through September in Egypt, the weather is perfect for hanging out and exploring all that Egypt has to offer. Don’t forget to bring your sunblock.
Recipe of the Month
Egyptian Vegan Stew with Peas and Carrots Recipe
A humble Egyptian stew that you will surely find in most Egyptian homes. This simple recipe is something you could enjoy from a friend’s Egyptian mother.

INGREDIENTS
- Extra Virgin Olive Oil
- 1 medium yellow onion, chopped
- 1 garlic clove, minced
- 3 carrots, chopped or diced small
- 1 lb. frozen sweet peas
- Salt
- 1 tsp coriander
- ½ tsp black pepper
- ½ tsp sweet Spanish paprika
- 15-oz can tomato sauce
- 2 cup quality vegetable broth
- Fresh parsley for garnish, optional
- Jalapeno peppers for garnish, optional
INSTRUCTIONS
Note: If you’re making Lebanese rice, a salad or another dish to serve along, make those first as the stew is quick to cook.
• In a 3-quart Dutch oven like this one, heat 2 tablespoon of Extra Virgin Olive Oil over medium-high heat.
• Add chopped onions and cook until translucent, stirring frequently. Add the garlic, carrots, peas, a pinch salt, and spices. Toss to combine. Cook for 5 minutes or so over medium-high heat, until fragrant, stirring regularly.
• Add broth and tomato sauce raise the heat. Bring to a boil for 5 minutes, then turn the heat to medium. Cover and simmer for 15 minutes or so. Occasionally, uncover and stir the stew. Taste and adjust seasoning. Peas and carrots should be cooked through and tender, but not mushy. Once you achieve that, it’s ready!
• Transfer the stew to serving bowls. Add a generous drizzle of Extra Virgin Olive Oil on top. Garnish with parsley, and a few slices of jalapeno if you like a little heat! Serve with warm pita or your favorite crusty bread. (See suggested starters above)
