Recipe of the Month
Umm Ali
a delicious Egyptian bread pudding dessert

Ingredients:
- 4 cups of stale puff pastry or croissants, torn into pieces
- 1/2 cup of chopped nuts (such as almonds, pistachios, or hazelnuts)
- 1/2 cup of raisins or sultanas
- 3 cups of milk
- 1 cup of heavy cream
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- A pinch of salt
- Butter or cooking spray for greasing the baking dish
Instructions:
Preheat your oven to 350°F (175°C).
Grease a baking dish with butter or cooking spray.
In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until it’s warm but not boiling. Stir occasionally to prevent scorching.
Add the sugar, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt to the milk mixture. Stir well until the sugar is dissolved and the flavors are combined.
Place the torn pieces of puff pastry or croissants into the greased baking dish.
Sprinkle chopped nuts and raisins/sultanas evenly over the pastry.
Pour the milk mixture over the pastry, ensuring it’s soaked thoroughly.
Gently press down on the pastry to help it absorb the liquid.
Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and the mixture is bubbling.
Remove the dish from the oven and allow it to cool slightly before serving.
Serve warm, scooping the Umm Ali into individual bowls. You can optionally garnish with additional nuts, raisins, and a dusting of powdered sugar.
Umm Ali is a comforting and indulgent dessert that captures the essence of Egyptian cuisine. Enjoy its rich flavors and the delightful combination of crunchy pastry, creamy custard, and the nutty sweetness of the toppings.
